12 slices baguette or gluten-free bread
olive oil, for brushing
4 medium tomatoes, diced
1 recipe prepared Le Taj Sauce
1⁄2 cup low-fat goat cheese, crumbled
- Place baguette slices on a Sheet Pan lined with a Sheet Pan Liner. Using a basting brush, lightly brush with oil. Broil until golden, approximately 2 minutes each side.
- In a medium bowl, combine tomatoes, sauce, and Toasted Onion. Mound 1 tbsp of mixture onto each baguette slice.
- Sprinkle with goat cheese, and place under broiler until cheese is lightly golden, 2–3 minutes.
