Epicure tasty take on the Mediterranean diet! Delicious grilled on the barbecue or baked in the oven.
1 cup low-fat plain yogurt
1⁄4 cup extra-virgin olive oil
2 tbsp lemon juice
4 boneless, skinless chicken breasts
- Combine yogurt, oil, lemon juice, Minced Garlic and seasoning in a medium mixing bowl. Add chicken and coat. Cover and marinate in fridge for at least 30 minutes, or overnight.
- Grill chicken at medium-high on the barbecue for 4–5 minutes per side, or place on parchment-lined Sheet Pan and bake in a 350° F (175° C) oven for 12-15 minutes.
