- In Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered on high 16–18 min, or until tender.
- Meanwhile, in a large bowl, whisk dressing mix with mayonnaise and yogurt. Set aside.
- Chop green onions and cucumbers. Slice cherry tomatoes in half.
- Add rice and veggies to bowl with dressing; toss to combine. Add toppings, if desired.
