The first taste of spring! Roasted asparagus tossed with garlic makes a simple, flavourful side dish for weeknight dinners or special occasions like Easter
Ingredients
½ cup extra-virgin olive oil
1 – 2 tbsp SPG
2 lbs thin asparagus, ends trimmed
Preparation
1. Preheat oven to 400°F.
2. Line a sheet pan with parchment. Set aside.
3. In a small bowl, mix together oil and SPG
4. Spread the asparagus in a single layer on the prepared pan. Drizzle on the SPG-oil
mixture.
5. Roast for 8-10 minutes, until the asparagus are bright green; do not overcook.
