These vibrant breakfast tostadas layer pulled pork, sautéed veggies, and eggs on crisp corn shells. Hearty, colorful, and full of flavor—perfect for a protein-packed start to your day.

Ingredients

1 tsp oil
2 cups shredded coleslaw mix
8 corn tostadas or tortillas
8 eggs
4 cups baby spinach
1 cup prepared Pulled Pork (warmed)

Preparation

  1. Heat oil in a large fry pan over medium heat.
  2. Crack in eggs. Fry until whites are set and yolk is done to your liking.
  3. Arrange two tostadas on each plate. Top with spinach, coleslaw and warm pork.
  4. Place eggs on tostadas. Garnish with toppings, if desired.
