Penne with Cherry Tomato Sauce is a fresh, flavorful pasta dish with sweet tomatoes, garlic, and a hint of spice. Finished with Parmesan and basil, it’s a light yet satisfying meal for any night of the week.
Ingredients
1 tbsp Minced Garlic
1/4 tsp crushed chilies (or to taste)
3 tbsp extra-virgin olive oil
1 lb (450 g) whole-grain penne
1/2 cup chicken stock (prepared)
3 cups cherry tomatoes (chopped)
1/4 cup Parmesan cheese
1 tsp sugar
1/4 cup dry white wine
8 large basil leaves (chopped)
Preparation
In medium pot, cook penne according to package directions.
In a frying pan over high heat, add tomatoes, oil, wine, stock, basil, Minced Garlic, sugar and crushed chilies, and cook until boiling. Reduce heat to medium-low and simmer approximately 10 minutes.
Add pasta to sauce, toss, sprinkle with Parmesan cheese and toss again. Serve immediately.
