Looking for a quick, filling, and nutritious meal? This stuffed sweet potato is your answer! Packed with protein-rich tuna and creamy avocado, this is a colourful, satisfying dish that's as healthy as it is delicious.

Ingredients

4 sweet potatoes
2 stalks celery
1 pickle
1 tbsp Lemon Dilly Dip Mix
3 cans (6 oz/170g each) tuna, drained
6 tbsp plain 2% Greek yogurt
2 tbsp mayo
2 avocados

Toppings (optional): sliced green onion, arugula

Preparation

1. Pierce the sweet potatoes several times with a fork. Place in a silicone steamer. Microwave covered on high for 15 mins or until tender.

2. Meanwhile, dice the celery and pickle; place in a bowl. Add dip mix, tuna, yogurt, and mayo. In a separate bowl, mash avocados.

3. Slice cooked potatoes across the top lengthwise; don't cut all the way through. Using a fork, fluff the inside and top with mashed avocado and the tuna mixture.

Tip: If you find the tuna mixture a bit dry, just add a little more yogurt or mayo.
