Super easy protein-rich breakfast loaded with veggies. 20 grams of protein per serving. Make a big batch ahead and have breakfast ready for the week. Use cottage cheese for even more of a protein boost.
Ingredients
12 large eggs
¾ cup milk, your choice
2 tbsp CCB or 3 Onion
Salt and pepper, to taste
1 ½ cups finely diced, mixed fresh or frozen veggies (we love spinach, bell peppers and onion)
1 cup grated cheddar cheese, divided
Preparation
Preheat oven to 375F. Lightly oil a muffin pan and place on a sheet pan.
In a large bowl, whisk together eggs, milk, and dip mix. Season with salt and pepper to taste.
Add veggies and stir to combine. Stir in half of the cheese.
Scoop half of the egg mixture evenly into the muffin pan, then sprinkle in half of the remaining cheese over each.
Bake in the oven for 20 - 25 minutes, or until the egg is fully set and the cheese has just started to turn golden on top.
Let cool before removing from the pan, then repeat with the remaining egg mixture.
