A roast that anchors the table without asking much of you — a mustard and herb crust, a simple sear, and the oven does the rest while everything else gets finished.

Ingredients

2 lbs (900 g) center-cut pork loin roast

1 tbsp Holiday or Sage & Apple Stuffing Seasoning

3 tbsp Dijon mustard

3 tbsp cider vinegar

2 tbsp olive oil

1 tsp Minced Garlic

Sea Salt (to taste)

Black Pepper (to taste)

Preparation

1. Preheat oven to 375° F (190° C).

2. In a small bowl, blend the Dijon, cider vinegar, olive oil, seasoning, and Minced Garlic.

3. Place pork loin on a sheet pan lined with a liner.

4. Rub half the Dijon mix over the exterior of the pork loin. Season with salt and pepper.

5. Roast in oven, basting periodically with remaining Dijon mix, until internal temperature reaches 150° F (65° C), about 1 – 1 1/2 hours.

6. Place roast on cutting board and let rest 10 minutes before slicing.
