Luscious roasted vegetables – a great side dish to any meal!

Ingredients

1 red onion

1 small eggplant

1 zucchini

6 Roma tomatoes

1 red pepper

1 yellow pepper

3 tbsp olive oil

1-2 tbsp Herb & Garlic Dip Mix

Black Pepper (to taste)

Sea Salt (to taste)

balsamic vinegar (to taste)

Preparation

  1. Preheat oven to 450° F (230° C).
  2. Cut all vegetables into 1/4" thick pieces.
  3. Combine first 8 ingredients in a mixing bowl and toss to coat.
  4. Place in a single layer on a lined sheet pan. Roast for 20 minutes, or until peppers are slightly charred.
  5. Drizzle with balsamic vinegar and season with Sea Salt and Pepper. Serve warm or at room temperature.
