Cool, crisp, and full of fresh flavour. Thinly sliced cucumbers and red onion are tossed with tangy vinegar, a touch of honey, and Lemon Dilly for an easy salad that’s perfect alongside grilled meals or as a refreshing spring and summer side.

Ingredients

2 English cucumbers, very thinly sliced
½ large red onion, very thinly sliced
¼ cup white wine vinegar 
1 tablespoon honey
1 teaspoon sea salt 
1 - 2 tablespoons Lemon Dilly
Chopped fresh chives, optional, for garnish
Freshly ground pepper

Preparation

1. In a large bowl, toss together the cucumber, onion, vinegar, honey, seasoning, and salt.
Chill for 20 minutes.
2. Transfer to a serving bowl, leaving any excess water behind. Sprinkle with chives, if desired. Season with several grinds of pepper and serve.
