Creamy carrot soup is a smooth, velvety soup made from carrot and warm spices then blended with cream or coconut milk for richness. Lightly sweet and deeply comforting.

Ingredients

4 carrots, coarsely chopped
1 large potato, peeled and cut into chunks
5 cups prepared Nourish Broth
1/2 tsp cinnamon
1 tsp ground ginger
1/2 cup half and half cream or coconut milk
SPG, to taste

Preparation

1. Combine carrots, potatoes, nourish broth, cinnamon and ground ginger. Simmer 20 minutes or until the vegetables are fork-tender.
2. Blend in a food processor or blender until smooth.
3. Return to the pot. Whisk in cream and season with SPG to taste. Reheat and serve.
