When the craving for nachos hits but you’re looking for a better-for-you option, these Loaded Sweet Potato Nachos deliver big time. Roasted sweet potato rounds create the perfect base for crave-worthy cheeseburger-style ground beef, melty cheddar cheese, and all your favourite toppings. Everything comes together on a single sheet pan, so you get satisfying flavour with minimal cleanup. Easy to make, fun to share, and guaranteed to make you a game-day or weeknight hero.
Ingredients
2 medium sweet potatoes (yams)
2 tbsp oil
1 pkg Cheeseburger Pasta Seasoning, divided
¾ lb (375 g) lean ground beef
1 ¼ cups shredded cheddar cheese, divided
Toppings (optional): sour cream, Better Than Bacon Topper, sliced green onion, avocado, salsa
Preparation
- Preheat oven to 400° F.
- Slice yams into ¼" coins. Toss with oil and 2tbsp seasoning then arrange potatoes in a single layer on sheet pan. Bake 25 - 30 min, flipping halfway, until golden brown and tender.
- Meanwhile, in pan over medium high heat, combine beef and remaining seasoning. Cook for 7 - 10 min or until cooked through. Break up large chunks of meat and stir in ¾ cup cheese.
- Top yams with cheesy ground beef mixture, and sprinkle with remaining ½ cup cheese. Bake 1 min, or until cheese is melted.
- Before serving, add additional toppings, if desired.
Recipe Note
Depending on the size of your yams, you may end up with more bites. If there are too many to arrange in a single layer, separate onto two Sheet Pans. To increase protein, swap some of beef for 1/2 cup beans (we like cannelloni beans)
