Ingredients
1 pkg Butter Chicken Seasoning
2 lbs (900 g) boneless, skinless chicken breasts, cubed
1 large onion
1 can (14 oz/398 ml) light coconut milk
1/2 cup crushed tomatoes
1 tbsp butter
1/2 cup 2% plain Greek yogurt
Preparation
Melt butter over medium-high heat. Add diced onion and sauté until softened.
Add seasoning, coconut milk, and tomatoes stir to combine. Bring to a boil.
Cube chicken & add to pan. Reduce heat to low and simmer 10 min or until chicken is cooked through.
Remove from heat and stir in yogurt. Serve with rice, if desired.
