Ingredients


Makes: 2 servings
  • 4 C (1 L) mixed greens
  • 1 C (250 ml) Pulled Chicken, prepared and warmed
  • 1 C (250 ml) halved cherry tomatoes
  • 1 red pepper, diced
  • 1/4 C (60 ml) cooked grains, such as brown rice or quinoa
  • 1/4 C (60 ml) black or kidney beans
  • 1/4 C (60 ml) grated cheddar or Monterey Jack cheese
  • 2 Tbsp (30 ml) Balsamic Vinaigrette, or your favourite Epicure Dressing

Preparation


 
  • Arrange first seven ingredients in two serving bowls.
  • Drizzle with dressing.

Tip


 

Tip: Divide filling between 2 tortillas. Bake in oven to make cheesy, pulled chicken quesadillas.
