Sylvie's Shrimp and Avocado Boats
A delicious appetizer or light lunch served with green vegetables or a salad.
Ingredients
Makes: 4 servings
- 2 ripe avocados, mashed (reserve avocado shells)
- 1/2 C (125 ml) light sour cream
- 1 Tbsp (15 ml) lemon juice
- 3 Tbsp (45 ml) Guacamole Dip Mix
- 1 C (250 ml) salad shrimp, reserve a few for garnish
- 2 tsp (10 ml) chives
Preparation
- Combine avocado, sour cream, lemon juice and Guacamole Dip Mix. Refrigerate 1 hour to allow flavours to mellow.
- Fold shrimp into prepared Guacamole.
- Scoop filling into reserved avocado shells. Garnish with reserved shrimp and a sprinkle of Chives.

Tip: Substitute Epicure Guacamole Dip Mix with your choice of Epicure Salsa.
