Ingredients


Makes: 4 servings
  • 2 Tbsp (30 ml) vegetable oil
  • 1 small onion, halved then sliced
  • 1 small red cabbage, cut in half, then thinly sliced
  • 1 large apple, cored and coarsely chopped
  • 1/4 C (60 ml) brown sugar
  • 1/4 C (60 ml) raspberry vinegar, or balsamic vinegar
  • 3/4 C (180 ml) water
  • 3 juniper berries
  • 1 bay leaves

Preparation


 
  • Heat oil in a Multipurpose Pot - 12 C over medium-high heat. Add onions and cabbage. Cook for 3 minutes, stirring continuously.
  • Add apple, sugar, Raspberry Vinegar, water, Juniper Berries and Bay Leaf.
  • Reduce heat to low, cover with a tight fitting lid and simmer for 25 minutes. Remove Juniper Berries and Bay Leaf before serving.

Tip


 

Tip: Bump up the flavour by adding 1 or 2 cinnamon sticks while braising.
