Ingredients


Makes: 6 servings
  • 1 pkg (1 lb/450 gr) rice vermicelli noodles
  • 2 large carrots, coarsely grated
  • 1 green pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 2 C (500 ml) fresh bean sprouts
  • 1 recipe prepared Sesame Ginger Dressing
  • 1 C (250 ml) coarsely chopped peanuts, nuts, or 3 Onion Roasted almonds
  • 1 Tbsp (15 ml) sesame seeds

Preparation


 
  • Boil noodles for 3 minutes, drain, and rinse to cool.
  • Place noodles in prep bowl with next 5 ingredients.
  • Add Sesame Ginger Dressing or your choice of other Epicure Dressing and toss to combine.
  • Sprinkle with chopped peanuts and sesame seeds.
