Ingredients


Makes: 2 servings
  • 1/4 C (60 ml) olive oil
  • 1 Tbsp (15 ml) Herb & Garlic Dip Mix, or Pesto Herb Mix
  • 1 pkg (4.5 oz/ 125 g) linguini, or gluten-free pasta of your choice
  • 4 C (1 L) baby spinach
  • Sea Salt (Grinder), freshly ground, to taste
  • Black Pepper (Grinder), freshly ground, to taste
  • Parmesan cheese, freshly grated, to taste

Preparation


 
  • Whisk oil and Herb & Garlic Dip Mix. Let stand for 10 minutes.
  • Meanwhile, in a Multipurpose Pot - 12 C , cook linguini according to package directions. Drain, reserving ¼ cup (60 ml) pasta water.
  • Place pasta back in pot and add oil mixture, spinach, Salt, and Pepper. Stir in cheese and some reserved cooking water. Stir to mix. Add more water, if needed. Serve with extra Parmesan, if you wish.
