Ingredients


Makes: 24 servings
  • 1/2 C (125 ml) butter
  • 1/2 C (125 ml) vegetable oil
  • 1 3/4 C (430 ml) sugar
  • 2 eggs
  • 1 tsp (5 ml) vanilla extract
  • 1/2 C (125 ml) buttermilk
  • 2 1/2 C (625 ml) flour
  • 1/4 C (60 ml) cocoa powder
  • 1 tsp (1 tsp) baking soda
  • 1 tsp (5 ml) salt
  • 2 C (500 ml) grated zucchini
  • 3/4 C (180 ml) walnut pieces
  • 2/3 C (160 ml) dark chocolate chips

Preparation


 
  • Preheat oven to 325° F (160° C).
  • Lightly spray a 9" x 13" (23 cm x 33 cm) pan with vegetable oil.
  • Cream together first six ingredients.
  • Sift together flour, cocoa, baking soda and salt, and add to creamed mixture.
  • Fold in zucchini and pour into prepared pan. Sprinkle with walnuts and chocolate chips.
  • Bake for 45 minutes.
