1 tbsp olive oil
1 onion, diced small
1 bell pepper, diced medium
1 tspMinced Garlic
1 tsp hot sauce, optional
1 can (14 oz /398 ml) diced tomato, including liquid
1 tbspVegetable Seasoning
1⁄4 cup light feta, crumbled, optional
Sea Salt (Grinder), optional
Black Pepper (Grinder), optional
- Heat oil in a fry pan over medium-high heat. Add onions, peppers, Minced Garlic, and hot sauce. Sauté, stirring occasionally, for approximately 5 minutes, until vegetables soften.
- Add tomatoes with liquid and seasoning. Reduce heat and simmer for 15 minutes or until mixture is slightly thickened.
- Crack eggs over sauce. Cover with lid and simmer for a further 5 minutes or until eggs are set.
- Garnish with feta, and season to taste.
