Roasted Balsamic Beets with Feta

Beets are at their best in the fall and winter, so add a pop of colour to your plates this season. They’re just as much a feast for the eyes as they are for the tastebuds, but here’s more to beets than just good looks: they’re jam packed with flavour and nutrients, too. Quick tip: toss the cooked beets, feta, and nuts with a few handfuls of fresh greens for a warm salad.


Ingredients

medium beets
2 tbsp
olive oil
1 tbsp
balsamic vinegar
1 tsp
maple syrup or honey
13 cup
crumbled feta or goat cheese

Toppings (optional): chopped pecans or walnuts, pomegranate seeds

Preparation
  1. Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner
  2. Peel and chop beets into bite-size pieces. Place in Multipurpose Steamer. Cover and microwave for 10 min, or until softened. 
  3. Meanwhile, in a small bowl, combine oil, vinegar, dressing mix, and syrup. 
  4. Toss steamed beets with vinegar mixture and transfer to pan; bake 5 min. 
  5. Transfer to serving dish and top with feta and additional toppings, if desired. 
Perfectly Balance Your Plate

Serve with 4 oz (113 g) lean protein and 1 cup roast potatoes.
