Red Pepper Jelly Glazed Chicken
16 oz (450 g) chicken breasts, skin on
Sea Salt, to taste
Black Pepper, to taste
2 tbsp butter
1⁄2 cupRed Pepper Jelly
1 tbsp lemon juice
- Preheat oven to 375° F (190° C).
- Season both sides of chicken breasts with Salt and Pepper. Place on sheet pan lined with parchment paper and roast for approximately 25 minutes.
- Heat a frying pan to medium low; melt butter and Red Pepper Jelly. Stir in lemon juice and set glaze aside.
- Brush glaze over chicken and place under broiler for 4 minutes. Turn over, apply remaining glaze and broil until crisp and pleasantly browned.
