4 cups mixed greens
1 cup preparedPulled Chicken, warmed
1 cup cherry tomatoes, halved
1 red pepper, diced
1⁄4 cup cooked grains, such as brown rice or quinoa
1⁄4 cup black or kidney beans
1⁄4 cup grated cheddar or Monterey Jack cheese
2 tbsp preparedBalsamic Vinaigrette Dressing, or your favorite Epicure dressing
- Arrange first seven ingredients in two serving bowls.
- Drizzle with dressing.
