A taste of summer! Double the recipe and use leftovers in Sylvie’s Provençal Ratatouille Pie.
1⁄2 cup olive oil
1 cup diced onion
2 garlic cloves, crushed
3 tbsp tomato paste
2 tsp Souvlaki Seasoning
1 tbsp Herbes Provencales
6 cups diced zucchini, quartered lengthwise and sliced
2 red peppers, seeded and diced
2 green peppers, seeded and diced
6 tomatoes, peeled and coarsely chopped
Sea Salt (Grinder), coarsely ground, to taste
Black Pepper (Grinder), coarsely ground, to taste
- Heat oil in a frying pan over medium heat. Add onion and garlic. Sauté until they begin to soften.
- Add tomato paste, Souvlaki Seasoning, Herbes Provençales, and zucchini. Stir and cook 5 minutes.
- Add peppers and tomatoes. Cook for 20 minutes, uncovered, stirring often.
- Season with Sea Salt and Black Pepper and serve.
