Nanaimo Bars

Ingredients
1⁄2 cup butter
1⁄4 cup brown sugar
1⁄4 cup cocoa powder
1 tsp vanilla extract
1 egg
1 cup coconut
2 cups graham wafer crumbs
1⁄2 cup walnut crumbs
1⁄4 cup butter
2 cups icing sugar
2 tbsp custard powder
1 tbsp milk
1⁄2 cup dark chocolate chips
1 tbsp butter
Preparation
- For the base, combine first 5 ingredients in a double boiler over simmering water. Stir until mixture resembles custard. Add coconut, graham wafer crumbs and walnut crumbs. Press into 9 x 13" pan to form base.
- For the middle layer, cream butter with icing sugar, custard powder and thin with milk. Spread over base and let sit for 15 minutes.
- Melt chocolate with butter until smooth, pour over top.
- Let set and cut in squares with a hot, dry knife.
