Mexican Fiesta Salad
A refreshing Mexican-inspired salad with avocados and fresh tomatoes.
2 ripe avocados
3 tomatoes, cut into wedges
1 tbspGuacamole Dip Mix
2 tbsp olive oil
2 limes, cut in half crosswise
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
- Score avocados in quarters lengthwise, and cut each in half lengthwise. Carefully remove pits, and peel off shells. Cut into wedges, and pile in the centre of a serving platter.
- Arrange tomatoes around avocado wedges.
- Sprinkle Guacamole Dip Mix overtop. Drizzle with oil and, using a 2-in-1 Citrus Press, juice limes overtop.
- Season with Salt and Pepper. Serve immediately – before avocados begin to brown.
