Ingredients
1 can (14 oz/398 ml)
chickpeas
1
zucchini
1
sweet potato or yam (about 1/2 lb/225 g)
1 12 tbsp
olive oil
4
pork loin centre chops (about 2.2 lbs/1 kg)

Preparation
  1. Preheat oven to 425°F. Line Sheet Pan with Sheet Pan Liner.
  2. Drain and rinse chickpeas, pat dry. Place on pan. 
  3. Slice zucchini on the diagonal. Cut peeled sweet potato in half lengthwise; thinly slice halves. Place on pan with chickpeas. Coat with 1 tbsp oil and 12 pkg seasoning; spread out in a single layer on pan. 
  4. Coat chops with remaining oil and seasoning. Arrange on top of veggies. 
  5. Roast, without stirring, until pork is cooked through, about 30 min. 
Tips

Prep all the ingredients while the oven preheats then pop it into the oven and bake everything at once. 

Swap pork for boneless, skinless chicken breasts or tofu steaks.
