Ingredients


Makes: 4 servings
  • 4 C (1 L) baby spinach or mixed greens
  • 2 tomatoes, cut into wedges
  • 2 C (500 ml) zucchini noodles
  • 1/2 avocado, thinly sliced
  • 1 recipe prepared Veggie Burger Mix (Pkg of 2), made into sliders, about 12 pieces, split into 4 servings
  • 1 C (250 ml) shredded cheddar
  • 1/2 red onion, sliced into rings
  • 3/4 C (180 ml) Balsamic Vinaigrette, prepared

Preparation


 
  • Arrange first seven ingredients in four bowls.
  • Drizzle with dressing and enjoy!

Tip

Tip: Don't have a Veggie Burger Mix on hand? Substitute 2 Portobello mushrooms and 4 cups black beans, baked and puréed, in place of the ground beef.
