Ingredients


Makes: 30 petites
  • 1/2 C (125 ml) Greek yogurt
  • 6 Tbsp (90 ml) vegetable oil
  • 1/3 C (80 ml) Carrot Cake Sweet Dip Mix
  • 2 eggs
  • 2 Tbsp (30 ml) molasses
  • 1 tsp (5 ml) vanilla extract
  • 1 1/3 C (330 ml) whole-wheat flour
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) baking soda
  • 1 C (250 ml) grated carrot

Preparation


 
  • Preheat oven to 350° F (180° C).
  • In a medium bowl, add the first six ingredients and whisk until smooth.
  • In another bowl, combine the remaining dry ingredients and grated carrot.
  • Fold dry ingredients into wet ingredients until evenly combined.
  • Place a Perfect Petites mold on a Sheet Pan. Using a Basting Brush, lightly brush with oil.
  • Divide batter evenly between petites and bake until a toothpick inserted in centre comes out clean, about 15–17 minutes.
  • When cool to the touch, flip mold onto Baking Sheet and twist to pop out carrot cake.

Tip


 

Tip: For extra texture, mix in ½ C (125 ml) raisins or ½ C (125 ml) chopped nuts.
