Ingredients


Makes: 4 servings
  • 1 Tbsp (15 ml) olive oil
  • 1 medium onion, diced
  • 2 Tbsp (30 ml)
  • 1 can (28 oz/796 ml) diced tomatoes, including juice
  • 1 tsp (5 ml) brown sugar
  • 3 C (750 ml) or Chicken Bouillon, prepared
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation


 
  • Heat olive oil in Multipurpose Pot - 12 C over medium-high heat. Sauté onions with Pesto Herb Mix until softened.
  • Add diced tomatoes, brown sugar and Bouillon. Bring to a boil, reduce heat and simmer for 10 minutes.
  • Season with Sea Salt and Black Pepper.

Tip


 

Tip: Top with freshly grated Parmesan cheese or a swirl of Pesto Crème Fraiche (simply add 1 tsp (5 ml) Epicure Pesto Herb Mix to 1 C (250 ml) Crème Fraîche.
