After dough has rested, pinch off 30 large walnut-sized balls of dough. Roll each ball of dough between hands until it is the shape of a small sausage.
Place one of the sausage-shaped pieces of dough onto a clean work surface. With spread-out fingers, roll dough into a large strand, about 1/2" (1 cm) thick. Lightly roll in Dip Mix. Place bread stick on Sheet Pan lined with lightly-greased Bake & Roll. Repeat process for all pieces of dough.
Cover baking sheet with clean towel and preheat oven to 400° F (205° C). Meanwhile, allow bread sticks to rest for 10 - 15 minutes.
Bake in oven for approximately 10 minutes. Turn over and return to oven for another 5 - 8 minutes, or until bread sticks are crisp, but not browned. Allow to cool before serving.
