Ingredients


Makes: 20 cookies
  • 250 ml (1 C) all-purpose flour
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) Apple Pie Spice
  • 1 C (250 ml) grated carrot
  • 1/3 C (80 ml) chopped walnuts or pecans
  • 1/3 C (80 ml) raisins
  • 1 egg
  • 1/3 C (80 ml) brown sugar
  • 1/3 C (80 ml) vegetable oil
  • 1 Tbsp (15 ml) orange juice
  • 1 Tbsp (15 ml) orange zest

Preparation


 
  • Preheat oven to 350° F (175° C).
  • Whisk together flour, baking powder and Apple Pie Spice.
  • Using a fork, stir in carrot, walnuts and raisins.
  • In a separate bowl, beat egg with sugar, oil, orange juice and orange zest. Pour over carrot mixture and stir to combine.
  • Drop dough by teaspoonful 2” (5 cm) apart onto parchment-lined Sheet Pan.
  • Bake for 15 minutes. Cool before serving.
