Ingredients


Makes: 4 servings
  • Enchilada Sauce:
  • 2 C (1 small) diced onions, peppers, and mushrooms
  • 1 Tbsp (15 ml) oil
  • 2 tsp (10 ml) Fajita Seasoning
  • 2 tsp (10 ml) Taco Seasoning
  • 1 can (28 oz /796 ml) crushed tomatoes
  • 1 Tbsp (15 ml) Poco Picante Salsa Mix
  • Enchiladas:
  • 1 small sliced, cooked turkey, chicken, or beef, your choice
  • 1 C (250 ml) grated cheese, your choice
  • 8 small tortillas

Preparation


 
  • Microwave Preparation:
    Enchilada Sauce:
    1. Combine vegetables, seasoning, and dip mix in a (p.1004212). Omit oil. Cover and microwave on high for 3 minutes.
    2. Add tomatoes and salsa mix. Microwave for 2 more minutes and set aside.
    Enchiladas:
    1. In a bowl, combine protein with ½ C (125 ml) cheese and 1 C (250 ml) prepared Enchilada Sauce.
    2. Divide protein mixture between tortillas. Roll up and place seam side down in the (p.1004212).
    3. Top with remaining Enchilada Sauce and cheese. Cover with lid, and microwave on high for 5 minutes.
  • Oven Preparation:
    Enchilada Sauce:
    1. Preheat oven to 350° F (175° C).
    2. Sauté vegetables in oil with seasoning and dip mix in a Fry Pan.
    3. Add tomatoes and salsa mix. Simmer for 3 minutes and set aside.
    Enchiladas:
    1. In a bowl, combine protein with ½ C (125 ml) cheese and 1 C (250 ml) prepared Enchilada Sauce.
    2. Divide protein mixture between tortillas. Roll up and place seam side down on a Sheet Pan lined with a Bake & Roll.
    3. Cover with remaining Enchilada Sauce and cheese.
    4. Bake for 15 minutes, or until cheese is bubbling.

Tip


 

Make it vegetarian:
Swap meat for 4 C (1 L) beans or lentils.
